Ingredients

  • 2 pounds beef shoulder
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ½ tablespoon garlic powder
  • 3 teaspoons salt
  • 2 tablespoons vegetable oil
  • ¾ cup fresh orange juice
  • 1 yellow onion, sliced thickly
  • 1 jalapeno, halved and stem removed
  • 16 corn tortillas
  • Assorted toppings (cilantro, diced onion, guacamole, salsa)

Instructions

  1. In a small bowl, mix paprika, cumin, oregano, garlic powder, and salt to create a spice rub.
  2. Trim excess fat from the beef and pat dry. Rub the spice mixture all over the beef.
  3. Set the Instant Pot to sauté mode, heat vegetable oil, and sear the beef on all sides for about 3 minutes per side. Remove and set aside.
  4. Pour fresh orange juice into the pot and scrape the bottom. Add sliced onions and jalapeno.
  5. Return the seared beef to the pot. Secure the lid and set to manual pressure for 90 minutes.
  6. After cooking is complete, allow natural release for 15 minutes before manually releasing any remaining pressure.
  7. Shred the beef using forks or a hand mixer until fluffy. Serve in warm corn tortillas with desired toppings.
