- 2 pounds beef shoulder
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- ½ tablespoon garlic powder
- 3 teaspoons salt
- 2 tablespoons vegetable oil
- ¾ cup fresh orange juice
- 1 yellow onion, sliced thickly
- 1 jalapeno, halved and stem removed
- 16 corn tortillas
- Assorted toppings (cilantro, diced onion, guacamole, salsa)
Instructions
- In a small bowl, mix paprika, cumin, oregano, garlic powder, and salt to create a spice rub.
- Trim excess fat from the beef and pat dry. Rub the spice mixture all over the beef.
- Set the Instant Pot to sauté mode, heat vegetable oil, and sear the beef on all sides for about 3 minutes per side. Remove and set aside.
- Pour fresh orange juice into the pot and scrape the bottom. Add sliced onions and jalapeno.
- Return the seared beef to the pot. Secure the lid and set to manual pressure for 90 minutes.
- After cooking is complete, allow natural release for 15 minutes before manually releasing any remaining pressure.
- Shred the beef using forks or a hand mixer until fluffy. Serve in warm corn tortillas with desired toppings.
