  • 1 head Cauliflower (cut into bite-sized florets)
  • 3 tbsp Avocado oil
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 14-oz can Sauerkraut (drained)
  • 1 cup Sugar-free thousand island dressing
  • 1 lb Corned beef (chopped into bite-size pieces)
  • 8 oz Swiss cheese slices (about 8 slices; adjust based on thickness)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In a large bowl, toss cauliflower florets with avocado oil, sea salt, and black pepper until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 25-30 minutes until tender and lightly browned.
  4. Once roasted, transfer the cauliflower to a 9×13 baking dish. Layer with drained sauerkraut, drizzle with dressing, add chopped corned beef evenly, and top with Swiss cheese slices.
