Ingredients

  • 6 cups cherry tomatoes
  • 1 tbsp sugar
  • 2 tbsp balsamic vinegar
  • 1/2 onion, roughly chopped
  • 1 red bell pepper, cut into segments
  • 46 cloves of garlic
  • olive oil
  • salt
  • black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, combine cherry tomatoes with sugar and balsamic vinegar. Drizzle with olive oil, season with salt and pepper, and mix until well coated.
  3. Spread the tomato mixture on a baking sheet. Add the onion, red bell pepper segments, and whole garlic cloves around the tomatoes. Drizzle with more olive oil and season again.
  4. Roast for about 45 minutes until tender.
  5. Let cool slightly, then remove garlic skins and transfer all contents to a blender. Blend until smooth.
