Ingredients
- 6 cups cherry tomatoes
- 1 tbsp sugar
- 2 tbsp balsamic vinegar
- 1/2 onion, roughly chopped
- 1 red bell pepper, cut into segments
- 4–6 cloves of garlic
- olive oil

- black pepper
Instructions
- Preheat the oven to 400°F.
- In a mixing bowl, combine cherry tomatoes with sugar and balsamic vinegar. Drizzle with olive oil, season with salt and pepper, and mix until well coated.
- Spread the tomato mixture on a baking sheet. Add the onion, red bell pepper segments, and whole garlic cloves around the tomatoes. Drizzle with more olive oil and season again.
- Roast for about 45 minutes until tender.
- Let cool slightly, then remove garlic skins and transfer all contents to a blender. Blend until smooth.
