  • 1 cup breadcrumbs (Panko or regular)
  • 2 eggs
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup ketchup (plus extra for topping)
  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 bell pepper, cut into chunks

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, and optional cheese; mix until just combined.
  3. Shape the mixture into small loaves on a parchment-lined sheet pan.

  5. Bake for 25-30 minutes until internal temperature of meatloaves reaches 160°F (70°C), brushing with ketchup in the last few minutes.
