Ingredients

  • 1 large yellow onion
  • 5 large red potatoes
  • 1 pound carrots
  • 16 ounces low sodium beef broth
  • 3 garlic cloves
  • 1 bay leaf
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 3 pounds brisket
  • 1 small head of cabbage

Instructions

  1. Place potatoes, carrots, and onion in the bottom of the slow cooker.
  2. In a mixing bowl, combine beef broth, minced garlic, bay leaf, brown sugar, apple cider vinegar, salt, allspice, mustard, dill weed, and black pepper; pour over vegetables.
  3. Lay brisket on top of the vegetable mixture. Cook on low for 8 hours.
  4. One hour before serving, add cabbage wedges on top and continue to cook until tender.
  5. Slice the brisket and serve with the cooked vegetables.
