- 1 large yellow onion
- 5 large red potatoes
- 1 pound carrots
- 16 ounces low sodium beef broth
- 3 garlic cloves
- 1 bay leaf
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 3 pounds brisket
- 1 small head of cabbage
Instructions
- Place potatoes, carrots, and onion in the bottom of the slow cooker.
- In a mixing bowl, combine beef broth, minced garlic, bay leaf, brown sugar, apple cider vinegar, salt, allspice, mustard, dill weed, and black pepper; pour over vegetables.
- Lay brisket on top of the vegetable mixture. Cook on low for 8 hours.
- One hour before serving, add cabbage wedges on top and continue to cook until tender.
- Slice the brisket and serve with the cooked vegetables.
