Ingredients
- 2 pounds fresh peaches

- 1 green or red apple
- 1 pound light brown sugar
- 1 and ¼ cups white vinegar
- ¼ teaspoon ground ginger
- 1 teaspoon grated fresh ginger
- 1 teaspoon ground cinnamon
- 7 cardamom pods (ground)
- ¼ teaspoon aniseed
- ½ teaspoon ground turmeric
- 1 teaspoon coriander seeds
- 1 teaspoon black pepper pods
- 1 small dried whole red chile
Instructions
- Peel, core, and chop the peaches and apple into small pieces. Finely chop the onion.
- In a large saucepan, combine the chopped fruits and onion with brown sugar, white vinegar, and spices.
- Bring the mixture to a boil over medium heat, then reduce to a gentle simmer.
- Cook for 45 minutes to an hour until it reaches a marmalade consistency, stirring occasionally.
