  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, finely chopped (deseeded for less heat)
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 1 egg (beaten)
  • Crushed tortilla chips for coating
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can (15 oz) Mexican-style tomatoes with green chilies
  • Fresh lime wedges for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together ground beef, onion, cilantro, jalapeño, garlic, cumin, chili powder, smoked paprika, salt, and pepper until well combined.
  3. Stir in shredded cheddar cheese and crushed tortilla chips. Add the beaten egg and mix until everything is evenly incorporated.
  4. Shape the mixture into golf-ball-sized meatballs.
  5. Heat olive oil in an ovenproof skillet over medium heat. Sear the meatballs until browned on all sides (around 5 minutes).
  6. Pour canned Mexican-style tomatoes with green chilies over the meatballs and transfer skillet to the oven.
  7. Bake for about 15–20 minutes or until meatballs reach an internal temperature of 160°F (70°C).
  8. Serve hot with fresh lime wedges.
