Ingredients
- 2 pounds potatoes (Russet or Idaho)
- 2 tablespoons olive oil
- 1 tablespoon cornstarch
- 1 tablespoon all-purpose flour
- ¼ teaspoon baking powder
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¾ cup mayonnaise
- 1–3 chipotles in adobo sauce
- 2 tablespoons lime juice
- ¼ teaspoon sugar
- 12 street taco size flour tortillas
- 2 cups shredded iceberg lettuce
- ¾ cup shredded cheddar cheese
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dice the potatoes into small cubes. In a large bowl, combine diced potatoes with olive oil and spices; toss until evenly coated.
- Spread seasoned potatoes on a baking sheet and bake for 30-35 minutes until golden brown and crispy.
- Meanwhile, whisk together mayonnaise, chipotles (to taste), lime juice, sugar, garlic powder, onion powder, paprika, and kosher salt until smooth to make the chipotle sauce.
- Warm tortillas in a skillet over medium heat. Assemble each taco with crispy potato bites, lettuce, cheese, and drizzle with chipotle sauce.
