  • 2 pounds potatoes (Russet or Idaho)
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¾ cup mayonnaise
  • 13 chipotles in adobo sauce
  • 2 tablespoons lime juice
  • ¼ teaspoon sugar
  • 12 street taco size flour tortillas
  • 2 cups shredded iceberg lettuce
  • ¾ cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the potatoes into small cubes. In a large bowl, combine diced potatoes with olive oil and spices; toss until evenly coated.
  3. Spread seasoned potatoes on a baking sheet and bake for 30-35 minutes until golden brown and crispy.
  4. Meanwhile, whisk together mayonnaise, chipotles (to taste), lime juice, sugar, garlic powder, onion powder, paprika, and kosher salt until smooth to make the chipotle sauce.
  5. Warm tortillas in a skillet over medium heat. Assemble each taco with crispy potato bites, lettuce, cheese, and drizzle with chipotle sauce.
