- 8 corn tortillas
- 3–1/2 cups shredded cheddar cheese
- 1/3 cup chopped white onion
- 3 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon Mexican oregano (can use regular oregano)
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon each sea salt and freshly cracked black pepper
- 1/4 cup all-purpose flour
- 2 cups chicken broth (or water or beef broth)
Instructions
- In a cast iron skillet over medium heat, brown your ground beef or chicken along with chopped onions until cooked through.
- Stir in the spices (chili powder, cumin, garlic powder) and cook briefly until fragrant.
- In another saucepan, whisk together flour and chicken broth; bring to a simmer until thickened and combine with the meat mixture.
- Spread some chili gravy in a baking dish, fill warmed tortillas with the meat mixture, roll tightly, and place seam-side down in the dish.
- Top with remaining chili gravy and cheese before baking at 350°F (175°C) for about 20 minutes until bubbly.
