Ingredients
- 2 cups Fresh Blueberries
- 2 tsp Cornstarch
- 1 tbsp Lemon Juice
- 1 tsp Vanilla Extract
- 1/4 cup Granulated Sugar
- 14 graham crackers, crushed into fine crumbs
- 6 tbsp Unsalted Butter, melted
- 2 8 oz packages of Cream Cheese, softened to room temperature
- 1/2 cup Granulated Sugar
- 2 Large Eggs, room temperature
- 1 tbsp Lemon Juice
- 3 tbsp All-Purpose Flour
Instructions
- Prepare the blueberry sauce by combining fresh blueberries, cornstarch, lemon juice, vanilla extract, and granulated sugar in a saucepan. Cook until thickened and set aside.
- Preheat your oven to 325°F (163°C). Mix crushed graham crackers with melted butter and press into the bottom of a baking dish. Bake for 10 minutes.
- In a bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla extract, lemon juice, and flour until just combined.
- Pour the cheesecake filling over the baked crust, dollop spoonfuls of blueberry sauce on top, and swirl gently.
- Bake for 40–50 minutes until set but slightly jiggly in the center. Cool gradually before refrigerating for at least two hours.
