  • 2 tsp Cornstarch
  • 1 tbsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1/4 cup Granulated Sugar
  • 14 graham crackers, crushed into fine crumbs
  • 6 tbsp Unsalted Butter, melted
  • 2 8 oz packages of Cream Cheese, softened to room temperature
  • 1/2 cup Granulated Sugar
  • 2 Large Eggs, room temperature
  • 1 tbsp Lemon Juice
  • 3 tbsp All-Purpose Flour

Instructions

  1. Prepare the blueberry sauce by combining fresh blueberries, cornstarch, lemon juice, vanilla extract, and granulated sugar in a saucepan. Cook until thickened and set aside.
  2. Preheat your oven to 325°F (163°C). Mix crushed graham crackers with melted butter and press into the bottom of a baking dish. Bake for 10 minutes.
  3. In a bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla extract, lemon juice, and flour until just combined.
  4. Pour the cheesecake filling over the baked crust, dollop spoonfuls of blueberry sauce on top, and swirl gently.
  5. Bake for 40–50 minutes until set but slightly jiggly in the center. Cool gradually before refrigerating for at least two hours.
