- 2 tbsp vegetable oil

- 4 tbsp unsalted butter
- 2–4 scallions (thinly sliced)
- ¼ cup sour cream or Greek yogurt
- ¼ cup buttermilk
- Minced fresh herbs (parsley, thyme, cilantro, chives; for garnish)
Instructions
- Preheat the oven to 400°F and line a baking sheet with foil.
- Rub each potato with oil, season with salt and pepper, and place on a wire rack over the baking sheet.
