  • 2 tbsp vegetable oil

  • 4 tbsp unsalted butter
  • 24 scallions (thinly sliced)
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup buttermilk
  • Minced fresh herbs (parsley, thyme, cilantro, chives; for garnish)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Rub each potato with oil, season with salt and pepper, and place on a wire rack over the baking sheet.
  3. Bake for about 45 minutes to 1 hour until fork-tender (internal temp of 209°F).
  4. Let cool for 10 minutes. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer in the skins.
  5. Bake the empty shells for another 10 minutes to crisp up.
  6. Mash the scooped-out flesh with half of the cheese, butter, scallions, sour cream, buttermilk, salt, and pepper until smooth.
