Ingredients
- 2 full racks baby back beef ribs (about 5 pounds)
- 3/4 cup dark brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup lemon zest (from about 4 lemons)
- 6 cloves garlic (chopped)
- 2 tablespoons kosher salt
- 4 teaspoons paprika
- 2 teaspoons freshly ground black pepper
- 1/4 teaspoon ground allspice
Instructions
- Preheat oven to 325°F.
- Remove the thin skin from the back of the ribs and lay them on a baking sheet.
- In a medium bowl, mix dark brown sugar, apple cider vinegar, lemon zest, chopped garlic, kosher salt, paprika, black pepper, and allspice until well combined.
- Coat ribs evenly with the marinade on both sides, cover with plastic wrap, and refrigerate overnight.
- Cover each rack in foil packets and place on a baking sheet; bake covered for 45 minutes.
- Open the foil packets and bake uncovered for another 45 minutes or until tender.
