  • 2 full racks baby back beef ribs (about 5 pounds)
  • 3/4 cup dark brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup lemon zest (from about 4 lemons)
  • 6 cloves garlic (chopped)
  • 2 tablespoons kosher salt
  • 4 teaspoons paprika
  • 2 teaspoons freshly ground black pepper
  • 1/4 teaspoon ground allspice

Instructions

  1. Preheat oven to 325°F.
  2. Remove the thin skin from the back of the ribs and lay them on a baking sheet.
  3. In a medium bowl, mix dark brown sugar, apple cider vinegar, lemon zest, chopped garlic, kosher salt, paprika, black pepper, and allspice until well combined.
  4. Coat ribs evenly with the marinade on both sides, cover with plastic wrap, and refrigerate overnight.
  5. Cover each rack in foil packets and place on a baking sheet; bake covered for 45 minutes.
  6. Open the foil packets and bake uncovered for another 45 minutes or until tender.
